Thoroughly mash the boiled elephant foot yam (ol) in a large bowl, ensuring there are no remaining lumps. ▶ 1:00

Add the grated coconut, ginger paste, chopped green chilies, chopped coriander leaves, salt, sugar, chili flakes, rice flour, and gram flour to the mashed yam. ▶ 1:53

Mix everything together well with your hands. Do not add any water, as the natural moisture of the boiled yam is sufficient. ▶ 2:24

TipAvoid adding any water when mixing the ingredients; the natural moisture from the boiled yam keeps the dough bound together.

Take small portions of the mixture, roll them into balls, and gently press them down to form flat, round patties. ▶ 3:27

Heat a generous amount of oil in a pan. Once hot, carefully add the patties in batches and fry on medium heat. ▶ 3:47

Gently flip the patties once one side is golden brown. Fry until both sides are evenly cooked and crispy. ▶ 4:00 medium

TipFlip the fritters very gently while frying, as they are soft and can easily break in the hot oil. Fry the fritters to a light golden brown rather than dark brown for the best texture and visual appeal.

Drain the fried fritters (bora) and transfer them to a plate. ▶ 5:13
