Heat mustard oil in a pan and lightly fry the salt and turmeric-marinated fish pieces and head until golden on both sides, then remove and set aside. ▶ 1:47 medium

Fry the eggplant wedges in the remaining oil until slightly soft, then remove and set aside. ▶ 3:46 medium

TipEggplants should be fried and added later in the process to prevent them from breaking apart and dissolving in the gravy.
