Wash the drumstick flowers thoroughly, soak them in water for 10 minutes to clean out any insects, and drain them completely. ▶ 0:54 10 min

TipSoak the flowers in water for 10 minutes to make sure any tiny bugs hidden inside are washed away.

In a bowl, combine the drumstick flowers, chopped onion, chopped green chilies, chopped coriander leaves, poppy seeds, a pinch of turmeric powder, a pinch of red chili powder, salt, sugar, gram flour, and rice flour. ▶ 1:57

TipIf preparing a pure vegetarian (niramish) version, simply omit the onions. Adding a little sugar is recommended to balance out the natural mild bitterness of the drumstick flowers. Using slightly more rice flour than gram flour (besan) helps achieve a much crunchier texture.

Mix the dry ingredients together first. Sprinkle a tiny splash of water with your hand and bind everything into a tight, dry mixture. ▶ 2:35

TipDo not add too much water; only sprinkle small drops to keep the mixture dry enough to remain crispy when fried.

Add the baking soda to the mixture and mix well to incorporate. ▶ 3:40

TipAdding baking soda makes the fritters puff up slightly and stay extra crispy.

Heat oil in a pan. Shape portions of the mixture into small, flat, round fritters and slide them into the hot oil. ▶ 3:58 medium-low

Deep fry the fritters in batches under medium-low heat for about 1 minute on each side until they turn deep golden-brown and crispy, then drain and set aside. ▶ 4:12 2 min · medium-low

TipAlways fry the fritters on medium-low heat. High heat will quickly burn the outside while leaving the inside raw.

In the same oil, fry two dried red chilies for a few seconds to use as a garnish. ▶ 6:53 medium-low
