Crispy and golden fritters made with delicate drumstick flowers, poppy seeds, and aromatic spices.

Wash the drumstick flowers thoroughly, soak them in water for 10 minutes to clean out any insects, and drain them completely. ▶ 0:54 10 min
In a bowl, combine the drumstick flowers, chopped onion, chopped green chilies, chopped coriander leaves, poppy seeds, a pinch of turmeric powder, a pinch of red chili powder, salt, sugar, gram flour, and rice flour. ▶ 1:57
Mix the dry ingredients together first. Sprinkle a tiny splash of water with your hand and bind everything into a tight, dry mixture. ▶ 2:35
Add the baking soda to the mixture and mix well to incorporate. ▶ 3:40
Heat oil in a pan. Shape portions of the mixture into small, flat, round fritters and slide them into the hot oil. ▶ 3:58 medium-low
Deep fry the fritters in batches under medium-low heat for about 1 minute on each side until they turn deep golden-brown and crispy, then drain and set aside. ▶ 4:12 2 min · medium-low
