Heat white oil in a pan, add turmeric powder, and fry the boiled duck eggs until lightly golden. Remove and set aside. ▶ 2:14 medium

Temper the remaining oil in the pan with bay leaves, dry red chilies, cumin seeds, cardamom, cloves, and cinnamon. ▶ 5:01 medium
Add the green chili paste and fry briefly, then stir in the onion-garlic-ginger paste. ▶ 5:20 medium

Uncover, stir, and add the spice paste (made of cumin, coriander, turmeric, Kashmiri red chili, and red chili powders mixed with a little water). Mix well, cover, and cook for 2-3 minutes. ▶ 6:52 3 min · medium-low
Uncover and sauté until oil separates. Add the fried potatoes and sauté with the masala, adding a splash of water if needed to prevent sticking. ▶ 7:16 medium
