Mutton Kasha

This rich and spicy slow-cooked mutton curry features tender meat infused with aromatic Indian spices.

👩‍🍳 Process

Place 1kg mutton, 1 sliced medium onion, 1 tbsp garlic paste, 1 tsp salt, and 1 cup water into a pressure cooker. ▶ 0:03

Cover the cooker and boil the mutton for 4 whistles. ▶ 0:09

Separate the boiled mutton pieces and keep the stock in a separate bowl. ▶ 0:12

TipKeep the mutton stock after boiling to use as the base gravy for a richer flavor.

Heat oil in a pan, and add green cardamom, cinnamon sticks, and bay leaves. ▶ 0:21

Add sliced onions and fry until they turn golden brown. ▶ 0:33

Add 1 tbsp sugar and fry along with the onions. ▶ 0:44

TipAdding sugar directly into the frying onions caramelizes it, imparting a gorgeous deep color to the gravy.

Stir in the ginger paste and garlic paste. ▶ 0:58

Add the onion paste and mix everything well. ▶ 1:49

Add salt, chili powder, turmeric powder, and coriander powder, then cook until the spices are aromatic. ▶ 2:02

Add 4 tsp of curd and stir to combine well with the spices. ▶ 2:32

Once the masala is fried and oil separates, add the boiled mutton pieces. ▶ 3:19

Remove the lid, stir the meat, then add the reserved mutton stock. ▶ 3:57

Turn off the heat, cover, and let it stand for 10 minutes before serving. ▶ 5:41 10 min
