A colorful medley of fresh vegetables and soft paneer simmered in a rich, creamy cashew gravy.

Add cashew nuts, melon seeds, poppy seeds, and a little water to a blender and grind into a smooth paste. ▶ 1:53
Heat white oil and ghee in a pan, add paneer cubes, and fry them for about a minute until lightly golden. Remove and set aside. ▶ 2:06 1 min
In the same pan, add the cauliflower florets and fry with a pinch of salt on high flame. ▶ 3:27 high
Add the chopped carrots to the cauliflower and continue frying together. ▶ 4:03
Add chopped French beans, green peas, and capsicum to the pan. Sauté all the vegetables together until well-cooked, then remove from the pan and set aside. ▶ 5:05
Add a bit more oil and ghee to the pan, and temper with cumin seeds. ▶ 5:37
Add ginger paste and green chili paste, fry lightly, then add chopped tomatoes and sauté. ▶ 5:55
Pour in the prepared cashew-melon-poppy seed paste along with a splash of water and mix. ▶ 6:56
Add Kashmiri red chili powder and salt, mixing well with the paste. ▶ 7:18
Cover and cook on medium-low heat to let the spices release their flavors. ▶ 8:27 2 min · medium-low
Uncover, add turmeric powder, whisked yogurt, and a splash of water, stirring everything together thoroughly. ▶ 8:31

Uncover and add the fried vegetables to the masala mixture, stirring well to coat the vegetables. ▶ 10:07
