Chicken Stew
A comforting, wholesome chicken stew packed with fresh vegetables and infused with aromatic whole spices.

Heat white oil in a pan, then add one teaspoon of butter and let it melt. ▶ 1:14 medium
Add whole spices (bay leaf, cardamom, cinnamon, cloves, and black peppercorns) to the hot pan to temper them. ▶ 2:00
Add the sliced onion and sauté until it turns translucent. ▶ 2:03
Add ginger paste, garlic paste, and green chili paste to the pan and fry until the raw aroma dissipates. ▶ 2:14
Add the whole peeled potatoes and raw papaya slices, then stir to combine with the aromatics. ▶ 2:30
Add carrot sticks, chopped beans, and tomato chunks to the pan, mixing them thoroughly. ▶ 3:25
Add the chicken pieces and stir-fry them with the vegetables for a few minutes. ▶ 3:44
Add turmeric powder, Kashmiri red chili powder, and black pepper powder, mixing well to coat the chicken and vegetables. ▶ 4:03
Season with salt and a pinch of sugar, and sauté for another minute. ▶ 5:14
Transfer the chicken and vegetable mixture into a pressure cooker. ▶ 5:31
Pour water into the pressure cooker (you can rinse the pan with water first to get the remaining spices) to create the stew gravy. ▶ 5:54
