Dimer Omelette Curry
Fluffy folded egg omelettes simmered in a fragrant, spiced gravy with crispy golden-fried potatoes.
👩🍳 Process
Beat the eggs with 1/2 tsp of salt in a bowl. ▶ 0:26
Add 2 tbsp of cut onions and 2 chopped green chillies to the beaten eggs and beat again. ▶ 0:38
Heat 1 tbsp of white oil in a pan, pour in half of the egg batter, and start folding it as it cooks. ▶ 0:58
Pour the remaining egg batter into the empty space in the pan to combine with the folded omelette, creating a thicker roll. ▶ 1:52
Cook both sides of the omelette well, cut it into pieces, and set aside. ▶ 2:21
In a separate pan, heat 2 tbsp of mustard oil and fry the potato pieces until golden brown, then remove them. ▶ 3:32
In the same oil, add cumin seeds, cardamom, cinnamon sticks, cloves, dry red chilli, and bay leaves for tempering. ▶ 3:51
Add chopped tomato, ginger paste, and garlic paste, then mix and fry well. ▶ 3:59
Add the big chopped onion and fry until softened. ▶ 5:00
Add salt, sugar, cumin powder, chilli powder, and turmeric powder, then stir to mix the spices. ▶ 5:19
Cover and cook on medium heat for 2 minutes to let the spices release their oil. ▶ 5:46 2 min · medium
Add the fried potatoes, mix well, pour in 2 cups of water, cover, and cook for 8 minutes. ▶ 5:57 8 min
Check if potatoes are tender, add the omelette pieces, cover, and cook for another 2 minutes. ▶ 7:04 2 min
