Dimer Khichuri
A comforting Bengali one-pot meal of spiced rice, red lentils, and soft-scrambled eggs.
👩🍳 Process
Add the washed and soaked parboiled rice and red lentils to a pot. ▶ 1:53
Pour in enough water to boil the rice and lentils thoroughly. ▶ 2:05
Add salt and the cubed potatoes to the pot, then cover and cook until soft. ▶ 2:22 10 min
While boiling, crack 2 eggs into a small bowl and beat them well. ▶ 2:35
Check if the rice, lentils, and potatoes are fully cooked. Remove from the heat and set aside. ▶ 3:37
Heat white oil in a larger pan, then add cumin seeds and dry red chilies as tempering. ▶ 4:05
Once fragrant, add the chopped onion and fry until golden brown. ▶ 4:14
Add 1 tsp of ginger paste and sauté to remove the raw smell. ▶ 5:10
Add cumin powder, red chili powder, turmeric powder, salt, sugar, and a splash of water. Sauté the spices well. ▶ 5:26
Pour in the beaten eggs and stir continuously to scramble them into the spices. ▶ 6:40
Add the boiled rice, lentils, and potatoes to the pan and mix thoroughly. ▶ 7:04
Rinse the boiling pot with water and pour that water into the pan to adjust the khichuri consistency. ▶ 7:20
Add another half teaspoon of turmeric powder if needed and stir. ▶ 8:24
Add the green chilies, cover, and cook on medium heat. ▶ 8:37 5 min · medium
Sprinkle garam masala powder over the top and stir well. ▶ 8:53
Turn off the heat, cover, and let the dish rest before serving. ▶ 9:14 10 min
