Grind the onion, tomato, and 3-4 dry red chilies together into a smooth paste. ▶ 0:32

Heat 2 tablespoons of mustard oil in a pan, add the boiled eggs, and fry them until golden brown, then set them aside. ▶ 1:57 medium

In the same oil, add the halved boiled potatoes and fry until they get some color, then set them aside. ▶ 2:19

Add 1 more tablespoon of mustard oil to the pan. Once hot, add cumin seeds, bay leaves, dry red chili, cardamom, cloves, and cinnamon sticks for tempering. ▶ 3:18

Pour in the prepared onion-tomato-chili paste. Rinse the mixer jar with a little water and add it to the pan. ▶ 3:31

Add 1 teaspoon of salt and mix well, letting the paste simmer. ▶ 3:49

Add ginger paste and garlic paste, then stir to combine. ▶ 4:00

Add cumin powder and turmeric powder, then sauté the spices well. ▶ 4:09
