Marinate the chicken with yogurt, salt, black pepper powder, and 2 tsp white oil for 1 hour. ▶ 0:13 60 min

Add cardamom, cinnamon, cloves, bay leaves, and dry red chilies to temper. Fry until aromatic. ▶ 0:38

Add the finely chopped onions and sauté until the color changes slightly without browning them too much. ▶ 0:50

TipSauté the chopped onions just until translucent; do not fry them till brown to maintain the light color of the gravy.

Add green chili paste and stir well to remove the raw smell. ▶ 1:44

Add onion paste and sauté thoroughly to combine with the rest of the spices. ▶ 2:18

TipAvoid adding any extra water to the gravy; the moisture released by the yogurt is sufficient to cook the chicken.
